Ingredients

  • 4 oz semi-sweet chocolate

  • 1/2 cup unsalted butter (if you only have salted butter, omit the salt from ingredient list)

  • 1 cup icing sugar

  • 2 eggs

  • 2 egg yolks

  • 6 tbsp flour

  • Pinch of salt

  • Whipped cream and berries of choice to serve with

Directions

  • Preheat over to 425 F
  • Butter 4 (3/4 cup) custard cups or ramekins
  • Microwave chocolate and butter in a large microwavable bowl on high for 1 minute, or until the butter is melted. Stir with a wire whisk until chocolate is completely melted.
  • Stir in sugar until well blended. Whisk in eggs and egg yolks. Stir in flour.
  • Divide batter between prepared custard cups/ramekins. Put cups on a baking sheet.
  • Bake 12-13 minutes, or until sides are firm but centres are soft. The cakes may crack on top, and that’s totally normal; the top becomes the bottom when you serve it anyway. Let cakes cool for 5 minutes.
  • Carefully run a small knife around cakes to loosen. Invert cakes onto your dessert dish and serve immediately with a dollop of whipped cream (on the side) and some fresh berries.
