Easy Chipotle-Inspired Marinade for Chicken, Steak, Shrimp and More

There’s nothing quite like being pestered for a recipe; it’s the ultimate culinary compliment! After I made this Chipotle-style marinade during a family holiday, my nephews wouldn’t let it go until I shared it. Apparently, it’s now in heavy rotation at their place, making an appearance at least once a week. I think that’s the true sign of a keeper; something easy enough for busy weeknights, but tasty enough that it actually gets made on repeat.
At our house, this marinade has become the base for what we jokingly call “Mom’s making Chipotle bowls” night. I marinate whatever protein we’re in the mood for, usually chicken or steak. Then we slice it up and pile it into bowls with all the usual suspects; rice or quinoa, beans, corn, salsa, lettuce, avocado, a dab of sour cream and a sprinkle of grated cheese. It’s one of those recipes that’s flexible, foolproof, and full of big, bold flavour, without a ton of effort. And now, I’m finally getting it written down for my nephews, my kids, and anyone else looking for an easy, go-to weeknight recipe you can count on.
🌶️ Chipotle-Inspired Marinade
Prep time: 10 minutes
Marinade time: 20-30 minutes
Serves: 3-4 adults
Marinade Ingredients
- ½ cup neutral oil (not olive oil)
- Zest of 1 lime
- Juice of 2 limes
- 2 garlic cloves, pressed or grated on a microplane
- Salt and pepper, to taste
- 1½ tbsp smoked paprika
- 2 tsp cumin
- 1 tsp dried oregano
- 2 jalapeños, roughly chopped (you can leave the seeds in)
Method
- In a glass bowl, mix together the oil, lime zest, lime juice, garlic, salt, pepper, smoked paprika, cumin, oregano and jalapeños.
- Add about 2 lbs of your favourite protein (chicken thighs, steak, shrimp or pork work beautifully).
- Toss to coat, making sure the marinade covers all surfaces of the meat.
- Cover and refrigerate for 20-30 minutes (limit to 20 minutes for shrimp).
- Remove from fridge and let sit at room temp while you preheat your cooking surface.
Cooking
- For the best flavour, cook on a hot BBQ or grill pan so you get some grill marks. Then reduce the heat to about medium to finish.
- Chicken thighs: Flatten for faster cooking. Grill 12-15 minutes depending on thickness.
- Steak: Around 15 minutes, depending on thickness and desired doneness.
- Shrimp: About 1 minute per side, until they turn pink and opaque.
- Don’t forget your meat thermometer for perfect results every time!

- Chipotle-style bowls (the classic) — Serve over rice or quinoa with black beans, corn, salsa, avocado, lettuce and shredded cheese. A little chopped cilantro sprinkled on top makes it fancy!
- Wrap it up — Slice the meat, load into tortillas with lettuce, tomatoes and sour cream.
- Taco night shortcut — Chop and stuff into taco shells with whatever veggies and cheese you have.
- Salad topper — Serve over mixed greens with tomato, cucumber, bell pepper and a cilantro-lime vinaigrette.
- Quick quesadilla filling — Add the chopped up leftovers to a tortilla with grated cheese, pan-fry or BBQ and serve with salsa and sour cream for dipping.
