Make Delicious, Easy Meals with these 6 Pantry Staples
You know that moment when it’s 5:43 pm, you’re hangry, and staring into your pantry like it’s going to magically hand you a delicious, homemade meal? Me too.
That’s why I’m all about keeping a smart, no-nonsense pantry (and fridge). Not stocked with “Whole Foods worthy” fancy ingredients you’ll use once and forget about, but with a handful of reliable staples that make pulling dinner together feel doable, even on your busiest days.
Here are 6 things I always keep on hand, plus how I use them to pull together quick, tasty meals that feel a little more ‘chef’s kiss‘ and a little less frozen sadness on a plate.
🍋 1. Citrus (Lemons, Limes, Oranges)
Where to store: Crisper drawer
What it does: Adds brightness, acidity, and freshness
There’s a reason every TV chef says “it just needs some acidity.” A squeeze of fresh lemon can wake-up veggies, balance a rich pan sauce, or turn a boring piece of fish into “ooh, that’s good”. Citrus zest and juice are also easy flavour boosts for vinaigrettes, marinades, or giving a boring piece of chicken a glow-up in under a minute.
Try:
– Squeezing lemon juice on roasted asparagus or steamed broccoli for a flavour boost
– Add lime juice to a vinaigrette and drizzle over a green salad for that ‘je ne sais quoi’ tang
– Although not technically a dinner food, my favourite citrus trick is to add the zest and juice of an orange to your French toast egg mixture. It is truly outstanding!
And please, for the love of flavour, skip the squeezy bottle stuff. You’re better than that.
🌿 2. Pesto
Where to store: Pantry (unopened), then fridge
What it does: Adds flavour and richness instantly
Get yourself a jar of shelf-stable pesto. Not the fresh kind that expires in a week and turns brown the second you open it. Get a jar that will sit patiently in your pantry until you (desperately) need it, then bam! Dinner is served.
Add a heaping spoonful to hot pasta, throw in some rotisserie chicken and broccoli and voilà, a delicious 10-minute meal (that most kids love I might add). Spread pesto on turkey and tomato sandwiches and pretend you’re eating at a Tuscan caffè. Slather it on chicken thighs and pop them in the air fryer for 15 minutes. You just hacked dinner my friend!
🫙 3. Herbes de Provence
Where to store: Pantry spice rack
What it does: Instantly makes roasted anything taste chic
Yes, it’s a bit pricey for dried herbs. But you don’t need much, so it will last ages. Plus, it turns plain roasted potatoes into “wow, did you make these yourself?”
Toss your veggies or potatoes with olive oil, kosher salt, and a sprinkle of Herbes de Provence before roasting. Suddenly it smells like you’re cooking in a cottage in the south of France, not reheating leftovers in Lethbridge.
🟡 4. Dijon Mustard
Where to store: Fridge
What it does: Makes dressings, sauces, and sandwiches taste a little more grown-up
Dijon is the utility player of the condiment world. You need this. Add it to salad dressing (it helps emulsify, and keeps the oil and vinegar from separating), stir it into a pan sauce after searing meat, or slather it on pork tenderloin with some salt and pepper before roasting.
It’s also fabulous on a sandwich. But you knew that.
🧀 5. Parmesan Cheese
Where to store: Fridge (get a real wedge, not the stuff in a shelf-stable can)
What it does: Adds salty, nutty, umami magic to everything
Yes, it’s a bit of a splurge, but you only need a little, and it keeps a long time in the fridge. Use a micro-plane (I like this microplane, it’s cheap, plus you can use it for citrus zesting!) to get that fine, snow-like dusting of parm that makes veggies, pasta, and chicken feel fancy.
My favourite tricks:
– Dust roasted broccoli, potatoes, or asparagus with parm while they’re hot
– Top pasta, rice dishes, or hearty soups
– Use it in my famous Caesar salad dressing
🧅 6. Onions and Garlic
Where to store: Pantry (cool, dark spot)
What they do: The flavour foundation to almost every dish
I don’t care what your eating style is, onions and garlic are non-negotiables. They are the starting point for soups, stews, sauces, stir-fries, curries, casseroles, and 90% of my favourite recipes.
They’re also cheap, easy to store, and instantly add depth and complexity to whatever you’re cooking, even if it’s just fried rice made with leftovers. Keep at least one yellow onion and a bulb of garlic around at all times; your future self will thank you.
Tip: Hate chopping onions? Get yourself a bag of frozen chopped onions and just take out what you need for your recipe.
The Bottom Line
If your pantry has these six things in stock, you’re always only 15 minutes away from a decent meal. Add in a couple of ‘quick to prepare’ proteins (eggs, canned beans, rotisserie chicken) and some frozen veggies, and you’ve got an easy but satisfying dinner.
It’s not about being fancy. It’s about being prepared.
